Thanksgiving is just around the corner, and it’s time for us to discover our next fabulous recipe. Already from Mrs.Weyant and Mrs.Devito, we have two recipes: sausage bread and sweet potato wedges. In this issue, we have more sweet potato fare: sweet potato casserole! The addition of pineapple sets it apart from other more orthodox recipes.

Mrs.Pettus’ Sweet Potato Casserole

All the usual flavors of Autumn but with a tropical twist.

Ingredients (Casserole)

2 cans whole sweet potato

1 can crushed pineapple

1/8 tsp. nutmeg

2 tsp. light brown sugar

1/2 tp. salt

1/4 cup butter

Ingredients (Topping)

1/3 cup packed brown sugar

1/2 cup butter

2 cups corn flakes

Directions

Start by combining all the ingredients for the casserole in a large mixing bowl. Once well mixed, pour into a 9 by 13 greased glass pan. Mix together the ingredients for the topping before sprinkling on the casserole. Bake at 350 degrees for 40 minutes. Enjoy!
